摘 要:以习近平同志为核心的党中央高度重视国家粮食安全,带领中国人民走出了一条中国特色的粮食安全之路。非遗保护作为保障可持续发展的重要方式,在全方位夯实粮食安全根基的过程中扮演着关键的角色,其中饮食类非遗可以为保障粮食安全提供战略资源。回顾《保护非物质文化遗产公约》通过二十年以来的历程,中国的饮食类非遗保护的核心工作概念正经历着从“饮食技艺”到“饮食方式”的转变趋势,非遗的过程性保护框架可以使多元行动方参与到饮食方式的保护上来,可以使非遗保护与全球重要农业文化遗产贯通起来,从而落实保障粮食安全的基础目标,实现可持续发展的长远图景。

Abstract: “The grain serves as the vital essence for all individuals and the invaluable asset of the nation.” As a crucial means to ensure sustainable development, the safeguarding of intangible cultural heritage (ICH) plays a pivotal role in strengthening the foundation of food security comprehensively. Within this context, elements related to food within the field of safeguarding ICH can offer strategic resources for ensuring food security. Reflecting on the evolution over two decades since the adoption of the Convention for Safeguarding Intangible Cultural Heritage in 2003, China’s core concept regarding safeguarding food-related ICH elements has shifted from focusing solely on “food-skills” to encompassing broader “foodways,” thus reshaping the systematic perspective and methodologies. The operational framework for safeguarding-in-process efforts enables active participation from all stakeholders in transmitting Chinese culinary culture, while adopting the conception of grand food as an overarching control fosters synergy between safeguarding ICH and conserving agricultural cultural heritage, thereby making significant contributions towards achieving sustainable development goals pertaining to food security.
